Damson syllabub (serves 4)

Ingredients

  • 4 tbs damson jam
  • 350ml (21floz) double cream
  • 6 tbs damson gin
  • 1 egg white
  • Rose petals (for decoration)
  • Grasmere Gingerbread

Method

  1. Mix the damson jam and the damson gin together.
  2. Whip the cream until it just begins to thicken, then add the gin mixture, whip until the mixture stands in firm peaks.
  3. Beat the egg white until it reaches the firm peak stage, then fold in the cream mixture.
  4. Pile this syllabub into four glasses and decorate with the rose petals.
  5. Serve with Grasmere Gingerbread.
