Damson syllabub (serves 4)

Ingredients
- 4 tbs damson jam
- 350ml (21floz) double cream
- 6 tbs damson gin
- 1 egg white
- Rose petals (for decoration)
- Grasmere Gingerbread
Method
- Mix the damson jam and the damson gin together.
- Whip the cream until it just begins to thicken, then add the gin mixture, whip until the mixture stands in
firm peaks.
- Beat the egg white until it reaches the firm peak stage, then fold in the cream mixture.
- Pile this syllabub into four glasses and decorate with the rose petals.
- Serve with Grasmere Gingerbread.
